Real "Mozzarella di Bufala Campana" is produced by the milk of black water buffalo from one of the seven provinces of the regions of Campania and Lazio in southern Italy. Only it is allowed to wear the Italian seal of origin for DOP (Denominazione d'Origine Protetta) products. Buffalo milk has twice as high fat content (8%) and longer shelf life than cow's milk. For a kilo of buffalo mozzarella, 4-5 liters of buffalo milk are needed. Mozzarella is white, has a pleasantly mild-sour fresh taste and a soft, fibrous and elastic consistency. Fat content 48% in the dry matter.
